“Sexy?” Not a word that comes to mind when talking about garlic.
Garlic can be an intimidating ingredient to work with but it really is one of the most
sensual, and tasty things to work with.
I was taught a few different ways to chop a garlic clove over the years: picking out the cloves from the head, them smacking the clove with the back of your knife or the bottom of a frying pan to release the papery peel from the clove and then chopping away.
I like to get these little jewels out the old fashioned way. One by one. I pull a clove out of the head and with my small pairing knife, slowly peel away the papery skin, as if I were opening up tiny presents. This arduous process relaxes me and forces me to focus on one task. It’s my form of meditation. But don’t get it twisted, if I need to rally and chop up a whole case of garlic, I’m slamming those guys under m knife so hard and so fast, theres no time to meditate on anything.
When purchasing garlic, please do yourself a favor and NEVER get the pre-pealed cloves from the store. That’s just weak. That garlic has been shoved in machines and has been exposed to the elements, which all take away from the pungent scent and flavor of the garlic. You will be looking for a tight, firm, smooth head of garlic. You can store your garlic in a dark cool place like a cupboard or a drawer. It will keep for a few months. if you ever have to question the quality of your garlic, then it’s probably time to throw it out. Discoloration, softness to the touch and possible odor should really give it away. If you know you’re not going to be using your garlic soon, but think it will be time to throw them out soon, peel your garlic and throw them in the freezer. This gives you a little more shelf life from your garlic. You might see a slight yellow color from them when they are in the freezer, but it’s all good.
If you’re feeling extra gangster and want to really utilize this wonderful product, swallow a garlic clove every morning. You’ll never get sick again, you’ll have perfect skin, and have awesome digestion. That’s sexy.
